As long as it is not something embarrassing or hurtful, sharing a funny event or memory you have of the couple is a good way to make everyone laugh. You can compliment the bride, appreciate the music, food, decoration etc and speak about other positive things if you are asked to make an impromptu speech and can’t think of anything.
